1. How do you think Stargate SG-1 will end?
2. If you were writing it, how would you end it?

I'll think more about the first one, but for my answer to the second question. . .
SG-1 would retire and Jack and Sam would end up in a relationship together. I saw the episode last night where the Tok'ra thought the Goa'uld had made them something which would cause them to assassinate someone and then kill themselves. But it turned out they were only hiding their true feelings for each other. I loved Jack's admission for his feelings for Carter. Carter's made it obvious in the past, but that was the first I ever saw him say it. His words, "Because I care about her a whole lot more than I should." Those two are so right for each other, it's a shame their positions in the military complicates that. That's why I think they should retire at the end and spend the rest of their lives together in peace. That would probably have to be on some other planet.
And I think Daniel should go with them because he's like a brother to them both. I don't know if Daniel's even interested in getting into another relationship or not, I don't know what his emotions are over the loss of Sha're and if he ever wants another relationship again or if he'd rather live out the rest of his days single. But I could see him eventually falling in love again with a lady who is sensitive to the pain he has gone through. But not until some time after he's been living a quiet life with or near Jack and Sam. Daniel makes me think of Frodo. I could see at the end of the series, his words being, "There are some things that time does not mend, some wounds that go too deep." And so he leaves everything behind to go with his closest friends where he can live out the rest of his life in peace.
Teal'c I see rejoining his own people. He does have a son who I believe is still alive. If the Goa'uld are defeated by the end of the series, I see Teal'c becoming a leader among his people. If not, I see him taking a more active part in fighting against the Goa'uld for the freedom of his people. I could then see him much later in life when he's much older, leaving the Jaffa to rejoin his old friends, once there is established peace and government among the Jaffa.
That's how I think it should end. :)
